Fairy Cake with icing Recipe

Fairy cakes are one of the easiest, tastiest desserts to make. Children can get involved as there really isn’t much to it. If your stuck in on a rainy day and you have the ingredients, go for it. It is also a good way to keep the kids away from watching TV or being bored. The most exciting part is waiting for them to rise, with that sweet smell in the air of fluffy fairy cakes cooking.

When it comes to decorating them, your children can get creative and messy adding toppings of their own choice. The more choices the better, I like to give them options of cocoa powder in a shaker to add a nice effect it’s also great fun, chopped up nuts and dark chocolate, peanut butter or chocolate spread can be a great topping and you have the plain butter icing that tastes and looks great. You can also experiment with fruits, making faces with dried fruits and finishing them off with some coconut shavings for a nice addition.

Ingredients

  • Plain all purpose flour (125g)
  • Caster Sugar (125g)
  • Butter (125g)
  • Baking Powder (1 tsp)
  • Vanilla Extract (1 tbsp)
  • Milk (20ml)
  • Medium Eggs (2)

Method

  • Preheat the oven to gas mark 4. Grease 12 whole cupcake tins.
  • Whisk/cream together the butter and sugar.
  • Add the egg into the butter and sugar mixture.
  • Slowly start adding in the flour and baking powder.
  • Finally pour in the vanilla extract and milk. Whisking until a smooth batter.
  • Evenly pour the mixture into each cake whole, put into the oven on the top shelf for 15 minutes or until golden brown.
  • Once they are cooked, allow to cool on a cake rack, once cooled add toppings of your choice or enjoy plain.

After that you will want to put the cases into a cupcake / yorkshire pudding oven tray as it will help keep them in shape. After cooking, your cakes will be ready and they can be cooled, then removed from these cases.
